Organic black-eyed peas are small, savory, and creamy-white with a distinctive dark spot at the sprouting point. Centuries ago, they were grown in west Africa, India, and China, making their way to the Americas in the 1600s. Today they’re a staple worldwide, grown on every continent except Australia and Antarctica.

In addition to their high protein content—they’re a great source of thiamine (Vitamin B1), iron, phosphorus, magnesium, and zinc. They’re also super high in copper and folate (Vitamin B9); one cup of cooked beans provides 50% of your daily value for copper and a whopping 88% for folate!

In the southern US, the black-eyed pea is a key ingredient in traditional soul food. It’s also common in Indian curries, Mediterranean and South American cuisine, and even a Vietnamese dessert made with black-eyed peas, sticky rice, and coconut milk. In other words, don't be afraid to experiment with these beans in the kitchen when you’re feeling adventurous! And just in case you needed one more reason to love them, black-eyed peas cook quickly with no need for presoaking.
