Organic black-eyed peas are small, savory, and creamy-white with a distinctive dark spot at the sprouting point. Centuries ago, they were grown in west Africa, India, and China, making their way to the Americas in the 1600s. Today they’re a staple worldwide, grown on every continent except Australia and Antarctica.

In addition to their high protein content—they’re a great source of thiamine (Vitamin B1), iron, phosphorus, magnesium, and zinc. They’re also super high in copper and folate (Vitamin B9); one cup of cooked beans provides 50% of your daily value for copper and a whopping 88% for folate!

In the southern US, the black-eyed pea is a key ingredient in traditional soul food. It’s also common in Indian curries, Mediterranean and South American cuisine, and even a Vietnamese dessert made with black-eyed peas, sticky rice, and coconut milk. In other words, don't be afraid to experiment with these beans in the kitchen when you’re feeling adventurous! Directions

Sort and rinse. Add 2 cups peas to 4 cups water. Simmer about 2 hours. The texture of these small peas blends well with bulgur or rice. Their flavor is greatly enhanced by garlic, tomatoes, onion, and vinegar.
